Some may be put off by the idea of eating heart but duck heart is not at all tough and doesn't taste like offal at all, it is simply a richer extension of the rest of the meat. Cooking is very quick compared to some cuts (about five minutes in a hot pan), and you can casserole or pan fry them in any number of ways. Season well and serve as part of a bigger dish or as a dainty starter ? they go really well in a creamy risotto.
