Black garlic is made by ageing regular garlic bulbs through a controlled heating and moisturising process for a number of weeks. The sugar reacts with amino acids to produce melanoidin, which gives it its dark colour. The taste is sweet with hints of raisin and tangy balsamic and the texture is soft and fudge like. It is a very interesting product and has become very popular with top chefs.
