Valencay is a rich goats cheese that is shaped like a pyramid without the top third - It is said that Napoleon passed through Valencay whilst returning from a campaign in Egypt, saw the cheese and angrily lopped off the top of the pyramid with his sword... Valencay is covered with a salted charcoal ash, allowing the cheese to keep its flavour for longer. As it matures,a natural blue mould forms round the outside. It has a sharp, full flavoured taste and pairs very well with Chablis or Sancerre.
