Beluga comes from the Huso Huso sturgeon which is the largest member of the Caspian Sea, and usually carries around 30 kilos of truly exceptional Beluga Caviar that is light to dark steely grey. The female Huso Huso Sturgeon do not mature until they are around 25 years old, hence the size of the Beluga egg... and the price... Beluga has a strong aftertaste and is considered the finest caviar because of the size of the eggs.
