It comes from the Lombardy region of northern Italy, more specifically Emilia Romagna and is considered the gourmet choice of hard cheeses. Although many people use it as a grating cheese, the Italians consider it far more of a 'table' cheese; try serving it with pears and walnuts and a nice glass of Chianti!
