Star anise has a pronounced sweetness, tasting of licorice, caramel and vanilla, with a slight undertone of camphor, giving it a peppery bite. It is used in licorice-scented cordials like Pernod as well as in candy and confections. But it is best known as one of the ingredients in Chinese five-spice powder or as a flavoring in brown sauces for braising beef, chicken or pork in Chinese cooking. Star anise is used in many cuisines. You can make a beef noodle soup (pho), (pho); a sweet, milky Indian tea (masala chai); and a versatile Indian spice blend.
