Our White Balsamic Vinegar is aged for over 18 years. A White Balsamic has all the same ingredients as a dark balsamic but is cooked at a lower temperature and then aged in a stainless steel barrel or white oak barrels exclusively. This allows the balsamic vinegar to have the wonderful balsamic flavor without the color. White Balsamic Vinegar is slightly more acidic in flavor, yet still sweet and is fantastic for cooking when the flavor of a balsamic is wanted but not the color.
