Polenta is an ancient Italian dish based on cereal flour. The most common cereal to be found in Polenta is corn. Originally imported from the Americas starting from the fifteenth century, corn gives a characteristic yellow colour to Polenta, like the Polenta piemontese proposed here by Granda Tradizioni. The polenta flour is usually stone-ground ("bramata" or coveted) more or less finely according to the region where it is produced. Once ready, the polenta is typically presented on the table on a circular plank covered by a cloth, and it is served with a spoon, cut in slices, with a wooden knife or with a cotton thread from below upwards, depending on its consistency.
