The Tomato Puree (Passata di Pomodoro) is one of most basic yet essential ingredients of the Italian cuisine, especially in southern Italian regions, where his wide daily use has made it the queen of preserves. Even today the day of the preparation of Tomato Puree i still marked on some family calendars and planned well in advance. Between the months of July and August, whole families get together for the preparation of Passata for the year ahead. Large quantities of fresh, firm and ripe tomatoes are purchased and processed. The preparation of the Passata can easily last for a whole day and is a veritable feast, celebrated in the evening with a meal in honor Italian ingredient par excellence: the tomato! This Italian excellence is produced in the most southern part of Puglia exclusively from local tomatoes and according to the traditions of the Salento, an area also known as "the land of the Sun, Sea and the Wind". The Yellow Tomato Puree is particularly suitable for fish, seafood and white meats.
