It was something about the way the amber leaves fell from the sky that one crisp, autumn morning that inspired me to make my pumpkin pie. I laid out the premium NON- GMO ingredients in separate bowls: pumpkin, cane sugar, eggs, butter and just a hint of spice. As the pie was baking, I wondered...what should I do with the left over filling? Of course, make cookies! I added a little flour and a pinch more spice, placed a small amount of dough on the baking sheet and watched the oven intently. The results were thin, crispy, extra crunchy cookies that my family and friends loved! I was so excited that I made more to share with the whole neighborhood. Hope you enjoy them too
