Amchur is made from tart, unripe mangoes, which are sliced and sun-dried, then ground to a powder and used as a souring agent. Amchur powder is finely ground but with a slightly fibrous texture. Amchur Powder is most commonly used in northern Indian vegetarian cooking. It has a honey-like fragrance and a sour fruity flavor and is a tart brown powder used in dishes where acidity is required. Used in stir fried vegetable dishes, soups, curries, and to tenderize meat and poultry. It is used to add a fruit flavor without adding moisture, or as a souring agent.
