"Recommending a Crémant de Limoux, rather than a Prosecco, makes me feel a bit like King Canute. There seems to be no holding back the tidal wave of Prosecco flowing into the nation's bars, trolleys, fridges and glasses, but if you sometimes (or always) crave something less sweet and frothy, here is a French sparkling wine that's more like Champagne. It's made in the same way as Champagne, using the same grape varieties, and has a similar, enticing, biscuity flavour, but it's softer and rounder. Philippe Collin, the son of a Champenois, makes this bottle-fermented sparkling wine from 'Champagne grapes' Pinot Noir & Chardonnay in the Limoux region. The fine mousse and clean finish of this excellent Crémant de Limoux belie its Seventies label and humble price tag. Made from a 'Champagne' blend of 80% Pinot Noir and 20% Chardonnay and bottle-fermented in the méthode traditionelle, it is a versatile crowd-pleasing fizz. With a light, frothy mousse, attractive biscuity nose and crisp, dry, spankingly-clean palate, this Crémant de Limoux Brut is a terrific choice for all the occasions when budgets are abridged but bubbles are beneficial.
