У сиру сильний аромат і соковитий смак. Молоко для виробництва цього сиру береться тільки з регіонів П'ємонт і Ломбардія. Цей універсальний пікантний сир подається на стіл як друга страва, а також використовується в кулінарії як основний інгредієнт делікатесних страв. Він застосовується при приготуванні соусів і кремів. Поєднується з міцними витриманими червоними винами, але може вживатися з м'яким білим і рожевим вином.
