Preserved lemons are a central component of North African cooking. Often used in tagines, they are a fantastic addition to salads and sauces as well. Having been preserved in brine, the sour quality of the lemon mellows and the result is a beautifully fragrant, intensely lemony and slightly tart fruit that, if used sparingly, will embody the essence of Moroccan cuisine.
