Red partridge is a European immigrant to our shores, and has a milder flavour and larger frame than our native grey partridges. It is a very low-maintenance roast or grill, as unlike chicken, it should come to the table pinkish, and needs very little doing to it to be delicious - just a few potatoes or sweet root vegetables (these are particularly good caramelised), some nutty cabbage and a gravy made from the bird's own juices. If you're feeling a little more creative, it's lovely in a pie with other game, such as rabbit, venison, grouse, pheasant and hare.
