This is wild boar which is free to forage over open pasture and woodland. Its diet of acorns, roots and saplings produces a firm, full flavoured meat. Try a marinade of 250ml red wine, three tablespoons of vinegar, one finely diced onion, two shallots roughly chopped, two crushed cloves of garlic, two bay leaves, a small bunch chopped parsley, nine whole juniper berries and two teaspoons of salt. Leave to absorb the flavours for at least a few hours then roast and enjoy a wonderfully rich meat, that is different from any other beast.
