Ingredients
- 4 pcs Eggs
- 1 pcs Onion finely chopped
- 2 clove Garlic finely chopped
- 1 tsp Curry powder medium strength
- 300 g Basmati rice cooked and cooled
- 3 pcs Carrot cut into thin strips
- 150 g Edamame shelled
- 1 pcs Bell pepper cut into strips
- 2 pcs Spring onion finely chopped
- 1 tsp Sugar
- 1 tbsp Soy sauce
- 2 tbsp Fish sauce
- 3 tbsp Sesame oil or another oil for frying
- 1 bunch Coriander fresh
- 1 pcs Cashews a handful, roughly chopped
- ½ pcs Red chilli finely chopped
- 1 pcs Lime cut into wedges
Steps
Heat a frying pan or wok with a little oil. Crack the eggs into the wok and stir well until just set.
Fry the onion, garlic and curry powder over medium heat, stirring, until the onion softens.
Add the rice and carrot and mix well until the rice is heated through.
Add the edamame beans, pepper and spring onion, and heat through well, stirring.
Season to taste with sugar, soy sauce and fish sauce, then stir the eggs into the dish.
Serve on plates with coriander, cashews, lime wedges and chilli to taste.
