Fish Sauce

Let's talk about fish sauce, and let's not be squeamish about it.

What happens inside that bottle is simple: fish and salt, left together for months, break down into something savory, deep, almost meaty. Salt pulls water out of the fish, protein falls apart into smaller pieces, and what's left behind is pure flavor concentrate. That's why a few drops change a whole pot of soup. One hundred grams gives you 35 kilocalories, about five grams of protein, almost no fat — this is not food, it's seasoning.

How do you choose a good one? Hold it to the light. It should be clear, amber to deep brown, never cloudy. Smell it — sharp, salty, a little funky, but not rotten. Rotten is wrong, funky is right. There's a difference, and your nose knows it.

Some people say fish sauce makes a dish taste "fishy." No! A good fish sauce, used properly, disappears into the background and just makes everything taste more like itself — richer, rounder. The mistake this belief leads to: cooks skip it entirely, afraid of fish in their pasta or their salad dressing, and their food stays flat, one-dimensional, missing that last invisible layer that makes you go back for more.
