Molasses

Sit with molasses a while and you start to see it for what it is: what's left in the pot after the sugar has been taken out. It's thick, dark, and clings to the spoon instead of pouring. Tip the jar and watch it fall — a slow, heavy ribbon, unbroken, catching the light as it goes.

Choose it by eye first. It can run anywhere from deep amber to almost black-brown, always glossy, always smooth on the spoon. Smell it — good molasses has a warm, slightly smoky sweetness, not a sour or fermented edge. Taste a little: it should feel round and full on the tongue, never thin or watery.

Some people say molasses is just a health-food substitute for sugar, gentler, kinder. No! It carries real sweetness and weight, with nearly seventy-five grams of carbohydrate in every hundred. Treat it as harmless and you'll pour it freely into batters and marinades, and wonder later why the dish turned syrupy, too dark, too heavy on the tongue. Respect it — measure it by the spoonful, not by the splash, and it rewards you with depth.
