Pasta is wheat, and wheat means gluten — that's the whole story. When you knead flour and water, gluten forms a net, elastic and stretchy. Dry pasta is that net locked in place, hard and brittle, waiting for boiling water to soften it. That's why good pasta holds its shape, bends without snapping, and gives you that gentle resistance in the middle — al dente, not raw flour, not mush.

Choose it the way you'd choose good bread. Look at the surface: matte and slightly rough means it was cut through bronze, and rough means the sauce will cling. Shiny and slick means a Teflon die, fast and cheap, and sauce will slide right off. Smell it — it should smell like wheat, clean and a little sweet, never musty. Snap a piece: a dry, sharp crack, not a soft bend.

Now, the misconception. Some people say to add oil to the boiling water so pasta won't stick. No! Oil floats on top, and when you drain the pasta, every strand gets pulled straight through that oily layer. What actually keeps pasta from sticking is water — enough of it, at a real boil, stirring during the first minute. Add oil instead, and you get pasta with a slick, sauce-repelling skin, and a sauce that never marries the noodle. That's the mistake: a good sauce, wasted.
