Good to know: Honey

Honey, let me tell you why it never spoils and why it sometimes turns to sugar in the jar, and why that's no fault at all.

Real honey is heavy with sugar, so a spoon of it drags slowly and thickly, catching the light in a way water never does. That density is also why bacteria struggle to take hold — honey is a hostile place for them, thick and glossy and unwelcoming, though the whole story of why is more than any one spoon can tell you.

Choose it by smell first, not by sight. A good honey smells of the flowers or the trees it came from — acacia smells green and light, buckwheat smells sharp, almost like leather. If it smells of nothing, walk away. Taste should linger at the back of your throat, not just sit sweet on the tongue.

Some people say crystallized honey has gone bad, or been mixed with sugar. No! Crystallization is honey behaving exactly as honey should — the natural sugars simply settle out over time, faster in a cool kitchen, slower in a warm one. It has nothing to do with quality.

And here is the mistake that misconception leads to: people throw away good honey, or worse, they warm it over direct heat to "fix" it, and cook out everything delicate in the aroma. Just stand the jar in warm water, gently, and let it soften back on its own.
