Cottage Cheese

Let me tell you about cottage cheese, and why it behaves the way it does in your hands.

Cottage cheese is curd — milk protein clumped together by acid or rennet, then drained of whey. That's the whole mechanism. The curds stay separate, loose, a little wet, because the draining stops before the mass is pressed into a solid block. That's why it crumbles instead of slicing.

Choose it by look first. Fresh curd is white, not grey, not yellowish. Smell it — clean and milky, faintly sour, never sharp or ammonia-like. Squeeze a little between your fingers. It should feel moist but not slimy, and it shouldn't weep a pool of watery liquid the moment you touch it.

Some people say cottage cheese is basically the same as cream cheese, just chunkier. No! Cream cheese is worked into a dense, heavy paste, smooth and spreadable, nothing like the loose curd in front of you. Cottage cheese is deliberately incomplete, unfinished on purpose. That misconception leads people to blend cottage cheese smooth for cheesecake or dips, thinking they're improving it. You lose the texture that made it worth buying, and you gain nothing that cream cheese doesn't already do better.
