Creme Fraiche

Creme fraiche doesn't curdle in a hot sauce. Pour it in slowly, let it warm alongside whatever you're cooking, and watch it turn smooth and glossy, never grainy, never broken. That's the whole trick, and any cook who's made a pan sauce with it will tell you the same thing.

Choose it by look and smell, not by label. Good creme fraiche looks creamy and velvety, with a smooth, even surface. It should smell faintly sour, clean, almost like yogurt but rounder, never sharp or yeasty. If it looks separated or smells off, put it back.

Some people say you can substitute sour cream for creme fraiche in any hot dish. No! Sour cream carries less fat, and it breaks in a hot sauce exactly where creme fraiche survives. That misconception ruins more good sauces than people realize — a cook adds sour cream to a simmering pot expecting the same behavior, and watches it turn grainy and thin as it heats. Creme fraiche forgives the pot. Sour cream does not.
