Cream is the fatty part of milk, skimmed off and kept on its own. That fat is what makes it behave differently in your pan: it coats your tongue, and it thickens sauces without flour. Some people say thicker cream always means better quality. No! Thickness mostly tells you about fat content. For freshness and taste, trust your nose and your tongue, not the spoon. A heavy cream can still be dull, and a lighter one can be excellent in soup.
That belief leads to one common mistake: cooks dump in the heaviest cream they can find for every dish, overwhelming delicate flavors in soups where a lighter cream would have let the vegetables speak. Match the cream to the dish, not the other way around.
