A mussel is a bivalve, closed tight by two muscles that hold the shells shut against the world. A live mussel clamps when you tap it. Smell it too — clean, like sea air, not like a dock at low tide.
Some cooks say that once a mussel has cooked, it has passed the test. No. Cooking is not where you judge a mussel — the judging happens before, raw, with your fingers and your nose. Once it's in the pot, trust what's in front of you: the meat should look plump, not shrunken or dry, and smell of the sea, the broth clean, not sour. If a mussel looks wrong or smells off once cooked, leave it out of the dish.
