Stock is not soup. Remember that, and you'll understand everything else. Soup is what you eat. Stock is what you build with — bones, water, time, and a handful of aromatics: onion, carrot, celery, maybe a bay leaf. Leave the pot long enough, and the bones give up something you can feel with your fingers before you ever taste it. A good stock, cooled in the fridge, should wobble like jelly. If it stays liquid, something was off — too little time, too few bones, or too much water for what you had.
Choose stock the way you choose a good broth at a market stall: by look first. It should be clear and golden, not cloudy — keep the pot at a gentle simmer, skim often, and it will stay that way. Smell it. Good stock smells clean, meaty, a little sweet. A sour smell — throw it out, don't argue with your nose.
Some people say stock is just flavored water, and any bones will do. No! Plain bones still give flavor, but joints, skin and cartilage give you that wobble, that weight on the spoon. Skip them, and you fill your kitchen with thin, lifeless soups that no salt can save. Respect the bones, and the stock will thank you with texture, not just taste.
