Cardamom

Cardamom is a pod, and everything you need to know sits inside it, not outside. Whole seeds keep their oil sealed like a jar with a lid. Crush them and the clock starts ticking — that sharp, eucalyptus-menthol smell you love starts leaving the moment air touches it. This is why ground cardamom from the shelf tastes like dust and pretends to be a spice.

Choose by weight in the hand, not by size. A good pod feels heavy for how small it is, and when you shake it, the seeds inside should rattle just a little, tight, not loose and dry. Snap one open: the seeds should be dark, almost black, sticky-looking, not pale and brittle. Smell it. If there's no punch, no cooling sting in your nose, put it back.

Some people say green and black cardamom are the same spice, just different colors. No! Black cardamom is a completely different pod, smoked over an open fire, and it carries a completely different flavor — resinous, campfire, nothing like the sweet floral green one. Mix them up in a dessert and you'll get smoke where you wanted perfume. Buy whole pods, crush them just before cooking, and cardamom will actually taste like something.
