Flaxseed Oil

Let me tell you about Flaxseed Oil, and why it deserves a place in your fridge, not your pan.

I keep this bottle cold and I never let it near a hot pan. Pour it over a warm pan once and you'll smell it yourself — that clean, grassy smell turns harsh, almost choking, and the taste you paid for is gone with it. So use it only where it goes in cold: over salad, over cooked grains, stirred into yogurt at the last moment.

How do you choose a good bottle? Smell it first. Fresh Flaxseed Oil smells faintly of grass and walnut, nutty, clean. Taste a drop, too — it should be mild, with no bitter bite at the back of your tongue. If the smell is sharp or stale, like old crayons, leave it on the shelf.

Some people say Flaxseed Oil is just another cooking oil, interchangeable with sunflower or olive. No! It is fragile, almost shy — one hot pan and it's gone, both in taste and in quality. The mistake this belief leads to is simple and sad: a cook heats it, wonders why dinner suddenly tastes bitter, and blames the oil instead of the flame. Keep it cold, keep it capped tight, keep it in the fridge.
