Let's talk about heavy cream. Check the label first — it has to say heavy cream or whipping cream, nothing thinner. Then look at it in the bottle: it should move slowly, almost lazily, and coat the glass in a thick, glossy layer when you tilt it back.
Smell it. Fresh cream smells faintly sweet, almost like fresh butter. Any sourness, any sharp note — walk away, no matter what the date on the carton says.
Some people say you can whip any cream if you just chill it long enough. No! Pour thin coffee cream into a bowl and whisk away — it stays liquid, maybe a little foamy on top, nothing more. Real heavy cream answers you back: the whisk meets resistance, the cream drags instead of splashing, and soft peaks start to hold their shape right there in the bowl.
That misconception sends people back to the store to blame their mixer. Or worse, they start stirring in gelatin and stabilizers to fix what was never broken. It was just the wrong bottle from the start. Read the label, feel the weight of it in the bottle, and your whisk will do the rest.
