Asafoetida

Let me tell you about asafoetida, and why cooks either love it or run from it.

This is resin, dried from the root of a giant fennel-like plant. Raw, it smells sharp, almost foul — like old garlic gone to war with sulfur. That smell is exactly why you use it. Heat changes it completely. Drop a pinch into hot oil, and within seconds the harshness burns off, leaving something warm and savoury behind, close to onion and garlic together. That is the whole trick of asafoetida: it is not a flavor you add, it is a flavor you transform.

Choose it by nose, not by label. Good asafoetida smells strong even through the jar. Weak, dusty, almost odorless powder has already lost its power sitting on a shelf too long.

Some people say it is just a garlic substitute for those who avoid garlic. No! Garlic tastes of garlic before and after cooking. Asafoetida tastes of almost nothing good until oil transforms it. Treat it like garlic, and you will throw in too much, then wonder why your dal tastes bitter and medicinal instead of round and deep. Respect the resin, not the substitute.
