Black Pepper

Let me tell you about black pepper, and why it deserves respect, not just a shake from a dusty jar.

Pepper burns because of an active compound, piperine — it works on the same heat receptors as chili, only quieter, rounder. Whole peppercorns keep that fire locked inside a hard shell. Ground pepper starts losing it the moment the mill opens the peppercorn to air. That's why pre-ground pepper tastes like brown dust after a few months on the shelf.

Choose peppercorns by weight in your palm, not by look. A good black peppercorn feels heavy and dense, almost like a tiny stone. Crack one — it should smell sharp, resinous, a little like pine and citrus together. If it smells flat or musty, leave it.

Some people say pepper should go into the pot early, with the onions, so the flavor "develops." No! Cooking for long minutes drives the aroma off and leaves only raw bitterness behind. That misconception is exactly why so many soups and stews taste harsh and one-note — the cook sends the pepper to its death an hour before the dish is even ready, instead of grinding it fresh at the very end, over the plate, where it belongs.
