Let's talk about cocoa powder, and let's talk honestly.

Real cocoa butter, once pressed out, leaves behind a powder that clumps the moment it meets liquid — that's why you never just pour it into milk and stir. You make a paste first, with a little hot water or milk, and only then loosen it. Skip that step and you'll be fighting lumps with a whisk for far longer than you need to.

Choose it by nose and by feel. Good cocoa smells warm, almost like dark chocolate itself, not dusty, not sour. Rub a pinch between your fingers — it should feel fine and silky, never gritty, never damp and clumping together.

Some people say cocoa powder is just "chocolate without the sugar." No! Chocolate is cocoa mass plus cocoa butter plus sugar. Cocoa powder is what's left after most of that butter is pressed out. That's why it has less fat and more protein for its weight than chocolate does. Confuse the two, and you'll stir cocoa powder into a recipe expecting it to behave like chocolate — and it simply won't.
