Let's talk about the pistachio, and let's talk honestly.

Nobody in the kitchen cares what the botanists call it. What matters is the shell. A good pistachio wants to split open on its own, a little smile of a crack right down the seam. No crack, no smile — you'll fight that shell with your nails and get very little for your trouble. Not worth it. Put it back.

Choose by feel and smell too. The kernel should feel firm, not soft, and it should smell clean and faintly sweet. Any flat, cardboard bitterness on the tongue means it's gone off, and you'll know it the moment you bite.

Now, the misconception. Some people say raw pistachios are "too oily" and roast them hard to dry them out. No! Pistachio is naturally rich in fat, and that's a big part of why it carries 560 kcal per 100 grams. Gentle warmth is all it needs. Roast it hard and you'll smell it turn — a sharp, burnt smell creeping in past the toasty one — and the kernels darken more than you meant them to. Bite one and it's bitter, not sweet. No fixing that once it's happened.
