Good to know: Vanillin

Vanillin, let's be honest about what it is. It's not vanilla. Vanilla is a pod, grown, cured, patient work, taking months. Vanillin is one note pulled out of that pod, or built elsewhere, and sold as white powder or crystals. Same smell, at first sniff, but one note instead of a whole orchestra.

Choose it by look and smell. It should be dry, loose, and smell clean and sweet. If it's clumped or damp, or the smell has gone sharp or stale, put it back.

Now the misconception. Some people say vanillin and vanilla extract are the same thing, except that one is cheaper. No! Vanilla carries a whole choir of aromas. Vanillin is just the loudest voice in that choir, isolated and multiplied. That's why vanilla tastes round and layered, while vanillin tastes loud and one-dimensional.

This mistake leads cooks to dump vanillin into a delicate cream or custard expecting depth, when a heavy hand there turns the aroma harsh, almost bitter, and bruises everything else in the bowl. Add it a pinch at a time, tasting as you go, and stop the moment the smell turns from clean to sharp. Use vanillin where you need simplicity, not where you need complexity. Know the difference, and your desserts will thank you.
