White pepper comes from fully ripe peppercorns, soaked until the outer skin loosens and can be washed away. What's left is the seed alone. That outer skin is where most of the aroma lives, so white pepper is sharper, more direct in its heat, but quieter in smell than black. Choose it by smell first: it should have a faint, almost fermented, barnyard note — that's normal, not spoilage. If it smells flat, like chalk, it's old. By look, the grains should be smooth, pale cream to greyish-ivory, dense and heavy in the hand, never dusty or papery.
