Lasagna Sheets are flat pasta, made from wheat, and wheat means gluten. Gluten is what gives the sheet its strength — a net of protein that holds the starch together so the sheet doesn't fall apart when it's wet, layered, and baked under the weight of sauce and cheese.

Choose sheets by look, not by the box's promises. Good sheets are pale gold, smooth, without white patches or cracks. Snap one — it should break clean and dry, with a short, sharp sound, not bend like cardboard.

Some people say you must always boil the sheets first, or the lasagna comes out dry. Not always! Many sheets are made to go straight into the dish raw — the sauce itself gives them the moisture they need while baking. That misconception leads straight to a kitchen mistake: the cook boils sheets that didn't need it, drains them half-cooked and fragile, and by the time the dish comes out of the oven, the layers have slumped into a soft, shapeless mass instead of holding their line.
