Asparagus

Look at asparagus before you touch it. The tip tells you everything — tight, closed, almost purple-green, like it's holding a secret. When it opens up and starts to feather, the stalk has already decided to become fibrous, woody, and there's no cooking trick that brings it back. Snap a spear near the base and listen. A clean, crisp break — that's fresh asparagus, full of water, ready for a hot pan. A bend that just folds without breaking — that's asparagus that's been sitting too long, losing water day by day, and it will chew like rope no matter what you do to it.

Some people say thick spears are tough and thin ones are tender. No! Thickness has nothing to do with it. A fat spear cut this morning is sweeter than a thin one that sat in a warehouse for a week. Freshness is what matters, not width.
