Arugula

Arugula bites back, and that's the whole point of it. That peppery, almost mustard-like heat comes alive the moment you tear the leaf — cutting or chewing bruises the cells and lets compounds trapped inside the plant finally mix together. Leave it whole and it's mild. Chop it right before serving and the heat is at its sharpest — let it sit too long and that heat actually fades. That's why you dress arugula at the last minute, right before it hits the plate.

Choose it by look first: leaves should stand upright, not wilt over your hand, and be deep green with no yellow edges. Smell it — good arugula smells green and slightly hot, like it's already warning you. If it smells flat or grassy with nothing behind it, it's old, and age makes it bitter rather than peppery, which is a different thing entirely.

Some people say leaf size means nothing for heat — no! Small, young leaves are genuinely milder, and mature leaves genuinely bite harder. That's exactly why "baby" arugula is picked young — it's gentle by design. Ignore size and you'll grab a mature bunch expecting a mild salad, then get burned in the bowl.
