Broccoli is one vegetable with two very different parts. The florets are tight clusters of flower buds — soft, mild, almost sweet — and they cook fast and turn to mush just as fast. The stalk is dense and fibrous, needing more time and a peeler to lose its tough outer skin. Treat them the same way in the pan and you'll ruin one or the other.

Choose broccoli with your eyes first: the head should be tight, dark green, sometimes with a blue or purple tint, never yellow. A yellowing head has lost its life — press it, and it feels soft where it should feel firm, and the florets look dry and loose instead of crisp and tightly packed. Smell it too — fresh broccoli smells green and clean, nothing sulfurous. A strong cabbage smell before you even cook it means it's old.

Some people say the stalk is waste, good only for stock or the bin. No! Peel it, and inside you'll find pale, sweet, crisp flesh, closer to kohlrabi than to trash. Throwing it away means throwing away a good part of your vegetable — and paying full price for florets alone.
