Chickpea Flour

Let's talk about chickpea flour, and let's be honest with each other.

Chickpeas are legumes, not grains, whatever the shelf next to the pasta tells you. No wheat, no rye, no barley in their family tree — so no gluten. That's the whole point of this flour and the reason it behaves so differently from wheat. There's no gluten network to trap air, so batters made with it don't rise and stretch the way wheat dough does. Instead, the starch and protein bind and thicken on their own — that's why it makes such a good glue for fritters and flatbreads.

Choose it by smell first. Fresh chickpea flour smells nutty, almost like raw peas. If it smells sharp, musty or a bit like old cardboard, put it back — the fat in it has gone rancid.

Some people say chickpea flour is just a gluten-free substitute for wheat flour, one-to-one, no thinking required. No! Without gluten, it can't hold a wheat-style dough together. Treat it that way, and you get crackers that crumble apart and flatbreads that tear before they ever reach the pan.
