Flour

Let me tell you about flour, and why it deserves more respect than we usually give it.

Wheat flour works because of gluten. Two proteins, glutenin and gliadin, sit quietly in the grain until water reaches them. Then they link into long elastic chains — that's your dough's strength, its ability to trap air and hold shape instead of collapsing into a puddle. Kneading builds that network fast; time and patience build it slowly. Either way, a good dough should feel smooth and springy under your palm, pulling back when you stretch it instead of tearing like wet paper.

Choosing flour is a job for your fingers and nose, not the label. Rub it — good flour feels dry, never clumpy or damp. Smell it. Fresh flour smells faintly sweet, like the field it came from. If it smells sour, musty, or like a basement, put it back — that flour has started to turn, and it will pass its stale, bitter flavor straight into your bread.

Some people say all-purpose flour ruins everything you use it for, bread and cake alike. No! It's a compromise, made to handle both. Your bread may rise a touch less proudly, your cake may lose a little of its tenderness — but neither will fail. The real mistake is not the flour. It's not paying attention to how the dough feels in your hands.
